Happy Memorial Day, God Bless America!

So I wanted to try yet another vanilla cupcake recipe. The recipe was for Homemade Funfetti cupcakes but I like the idea of coloring my cake instead :)
I was only able to make 13 cupcakes from this batter.. However I don't think I'll make these cupcakes again. I didn't care for the recipe.. So the search continues.
For the frosting I used Buttercream Dream.

Cheesecake

Yesterday I made this yummy Juniors Cheesecake. It's creamy and smooth, everything you like about a cheesecake. I felt it needed a bit more tang which you would usually get from Lemon/Sour cream. But not bad for my first cheesecake! I wasn't able to get any good photos due to poor lighting, so these will have to do.

Vanilla cake!

So as you know I've been trying to find the best vanilla/yellow cake. So far I found two that I think may end my search! I tried Amy Sedaris Cupcake recipe, and also Vanilla Butter Cake from the Mermaid Bakery.
I liked the taste of both but I did use the same extracts. For the Vanilla Butter cake I used a cake flour and could tell the difference in the crumb. Very tender and smooth. I think both recipes are keepers!!

When I say oreo you say...?? Cupcake!

So I've been excited to try these cupcakes by the Cupcake Doctor, they're Oreo Cupcakes! HTEAC has the recipe posted here.
I really enjoyed making these, they taste pretty good too! I love the cookie on the bottom! If you pull them apart you won't get the even cream on both sides so I turned them until they came apart. For the icing I made Buttercream Dream and just added Oreo crumbs.
Good cupcake, can't wait to try more of her recipes!
Update: These are AMAZING cold! :)
