Fiber One Pancakes with Chocolate Chips

Fiber one pancakes are our FAVORITE – when we make them ;-)
I don’t have children yet, but  for some reason it seems like my husband and I buy enough cereal to have at least 5.  Just recently we purchased Fiber One with Honey Clusters.  I’m not the type to eat cereal for breakfast everyday, I’d rather eggs, oatmeal, or yogurt and fruit for breakfast.  So in order to de-clutter our cereal stock I made pancakes!  Who can’t use a little extra fiber in their diet? :-)
Fiber One Chocolate Chip Pancakes
Makes 7-9 medium sized pancakes
1 1/2 Cups Fiber One Cereal, Honey Clusters
3/4 Cup All Purpose Flour
3 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 1/2 Cup Milk
1 Teaspoon Vanilla Bean Paste
1 Egg
1-2 Tablespoons Butter
1/2 Cup Semi-Sweet Chocolate Chips (optional)

In a blender or food processor, crush the Fiber One Cereal.  Once it is crumbly place the flour into the blender and pulse on low.

Place the cereal flour mixture in a bowl and add the remaining ingredients. (excluding butter and chocolate chips) Whisk together, meanwhile heat a nonstick pan  on medium-low with butter. ( I used my Manpan, so I had to coat in Canola Oil, then a tab of butter for flavor)  Once the butter is melted, start cooking! 
I used a large cookie scoop for my pancakes, you could also use a 1/4 measuring cup.  Place about 10 chocolate chips on the top of the pancake once it’s in the pan.  Once you see tiny air bubbles you can flip your pancakes.

I like to eat mine with a tiny pat of butter and shot glass full of warm syrup! :)

Annnnd, now I’m full.  Hooray for fiber! :)

    These look amazing.I was just eating my cup of Fiber One and thinking ick.. I dont have the Fiber One ‘Honey Cluster.I have Fiber One Original so I will try it using maybe 1 cup instead of 1 1/2 Cup Great idea Thank you!
