Mini Buttery Biscuits

I don't know about you, but I absolutely love biscuits with my Thanksgiving meal!  Not only is it perfect for the leftover turkey, they're just perfect plain too!  I like my biscuits buttery from the start so if I want to eat them plain that's quite alright.  I hate kneading dough.. it's just one of those things that I don't have time for.  That's why I love the dough hook on my KitchenAid Stand Mixer.  It's one of those things everyone "kneads" in their life, don't you think? ;-)

So these biscuits are pretty easy, just put everything into your mixer and let it do all the work.  I am all about one bowl mixing, which you most likely know by now.  I love the fact that these biscuits are mini.  I could eat 3 to equal a regular size muffin.  Much better than eating 3 regular size biscuits!

Mini Buttery Biscuits
Serves 7-10 people

2 Cups All-Purpose Flour
1 Teaspoon Salt
1 Teaspoon Sugar
1 Tablespoon Baking Powder
1/3 Cup Butter, chopped into tiny squares
3/4 Cup Milk
1-2 Tablespoons Butter, melted

Preheat oven to 400 degrees.
Combine dry ingredients with chopped butter into a Stand Mixer with dough hook until mixture is course and crumbly,

Slowly pour in the milk,

Knead the dough in the mixer for 2-3 minutes on medium speed.  Then put your dough on a floured surface and flatten it out.

To cut mini biscuits, I use a large piping tip.  It works wonderfully!

Place your biscuits on a baking sheet, and brush them with the melted butter.

Bake for 12-15 minutes or until biscuits are lightly golden.
Enjoy!

  10. YUM!!! I make small biscuits too but use the lids from the spice jars. I rub off any spices that may be on them prior to cutting with them, of course.

    Sooo, now I want some biscuits and it's 8:30PM here in Seattle.
