Mozzarella Baked Potato

I crave carbs like crazy.. even before being pregnant.  Bread, pasta, and especially anything to do with potatoes.  Last night I made some baked potatoes and we had one leftover.  Instead of chucking it I figured I’d eat it today, but I didn’t want it with just butter..  It needs something.  Then I thought back about my Baked Mozzarella Potatoes.  Mmm, that’s good!  So thankfully I had some fresh mozzarella on hand and made this within minutes.  
Mozzarella Baked Potato
Precooked Baked Potato
Butter
Garlic Salt
Pepper
Mozzarella

Warm up the potato in the microwave, then cut it open.

Mozzarella Baked Potato
For mash the potato with a fork and add in the butter.

Mozzarella Baked Potato
Sprinkle the potato with garlic salt and pepper.
Mozzarella Baked Potato
Chop up some fresh mozzarella and place on the potato – use as much as you’d like.
Mozzarella Baked Potato
Put into the microwave or under broiler for 1-1 1/2 minutes or until cheese is melted.

Dig in… I know I am :)

    I should not even be look at that right now. I love mozzarella but I don’t think I’ve ever eaten it on a potato. Must try!

    OH YES I do this all the time and switch out the cheese too love mexican cheese sometimes gives it a little kick with salsa OH YUM

    I’ve never made a baked potato this way, but I have done mashed potatoes with melted paremsian and romano cheese.
