Do you ever make something and think to yourself, "Why didn't I write down what I used?" Yeah, that's me almost every night.. Hubby is pleased as well as I, but then I realize.. I didn't write anything down. So last night I made chicken burgers. I was craving a nice juicy cheeseburger with McDonald's Big Mac Sauce.. That stuff is magic right there. So I rummaged through the pantry and fridge to see if I could somehow make what I was craving. Thankfully we had enough on hand to make Chicken Burgers..
Since I didn't write down the exact measurements I can at least tell you what went into these burgers.. and I will be making them again soon, but this time I'll be sure to have a pen and paper. I think I learned this way of cooking from my Grandma. She was famous for "Add a little of this a little of that" No measurements. Her food was incredible.. Grandma knew best - "You don't know by measuring, you know by tasting!"
Chicken Burgers
1lb 99%FF Ground Chicken
Italian bread crumbs
2 Eggs
Milk
1 Onion, chopped
Garlic Salt - Season Salt - Peppercorn Medley
Cheese
Mix together and form into patties. Pan fry 3 minutes each side and then finish in a 375 degree preheated oven until internal temperature reaches 165. Finish off with a slice of american cheese, or cheddar.
Then I topped it with a sauce that was pretty darn close to the Big Mac Sauce..
Almost Big Mac Sauce
1 Kosher Dill Pickle, chopped
Mayo (base)
Mustard (small amount)
Ketchup (medium amount)
Splash of White Vinegar
Pinch of Onion and Garlic Powder
Mix all and chill in the refrigerator until use.
I put my burger on top of a bed of chopped romaine, sliced tomatoes, topped with the sauce, and some delicious coleslaw on the side.. I enjoyed :)

ReplyDeleteHubs and I were just talking about re-creating a Big Mac at home last week. I'm happy to see I'm not alone in my fast food loves.
ReplyDeleteI've never had a chicken burger, it sounds delicious. I don't like pickles so the sauce is a no-go for me, but I know a lot of people like it.
ReplyDeleteI cook that way a lot, too. My mom still never uses measurements. I will definitely be trying this sauce, soon!
ReplyDeleteThat's fantastic that you were able to replicate it at home!
ReplyDeleteI often do the same thing and forget to measure.

ReplyDeleteThat looks delicious! I'm the same way with making something and not writing down the recipe. Sharing recipes on my blog has really helped me keep track of the food I'm creating.
ReplyDeleteMmmm...so it's the vinegar that's the secret ingredient. YUM!
