Since having my daughter there's been something bothering me. The fact that she will never know my parents hurts me so badly. They both passed away in October, so I figured what better way for my daughter to remember them than to have a "Happy Birthday in Heaven" to her Grandma and Grandpa. Of course I'll tell her about them once she is older and can really understand, but this is perfect for a little growing up to incorporate them into her life.
My mother loved Cool Whip, so as soon as I heard about Cool Whip Frosting coming out I knew that it would be the best topping for our birthday dessert. Instead of an ordinary cupcake I made a brownie cupcake since my parents love brownies. ( they loved sweets! )
My hubby and I headed to the Walmart to pick up the new topping and a few other things that we needed to make dinner. I was first going to get the Cream Cheese Cool Whip frosting, however my store did not carry it so we got a few of the chocolate and vanilla flavors. I love the packaging it's cute and very eye catching. We found it right in the stores freezer section next to the regular Cool Whip.
Once we were done shopping I came home made dinner, and then got to baking the brownies. They were so delicious! It's even delicious on it's own! We love #CoolWhipFrosting! Happy Birthday in Heaven Brownie Cupcakes
serves 6
Brownie:
1/4 Cup Butter, melted
1/4 Cup Sugar
1/8 Brown Sugar
1 Egg
Splash of Vanilla
1/4 Cup Cocoa Powder
1/4 Cup Flour
Pinch of Salt and
1/8 Teaspoon Baking Powder
Mix together and put into muffin tins filled half way. (Batter will be very thick) Bake for 13-15 minutes or until toothpick inserted comes out clean.
Strawberries and Syrup:
5 Frozen Strawberries
1/2 Cup Water
3/4 Cup Sugar
In a sauce pan heat the water and sugar. Add strawberries and bring to a boil. Set aside and let thicken.
Chocolate Sauce:
1/2 Cup 2% Milk
1/2 Teaspoon Butter
3/4 Cup Semi-Sweet Chocolate Chips
Boil milk and butter and then add in the chips. Stir until smooth.

Assemble:
Slice up the strawberries, and place them on top of the brownies. Then take the Cool Whip Frosting and place into a baggie with a frosting tip or just snip a hole and swirl some on top. Drizzle some chocolate and strawberry sauce, and then enjoy!

ReplyDeleteHappy Birthday in Heaven Brownie Cupcakes? I'm going to use your recipe in December for what should have been my daughter's 20th birthday. She LOVED brownies, and I'm sure would have opted for the chocolate frosting. Chocolate was one of her favorites. She'd order a Brownie Blizzard with chocolate ice cream instead of vanilla whenever we were at the DQ.

ReplyDeleteI have never heard of the Cool Whip Frosting before. Oh my goodness! I NEED some! I lve Cool Whip! In fact I have used regular Cool Whip to "frost" cupcakes and cake in the past (it works good!).
