Every year this time I'm usually a baking machine, but since I'm staying home there's no where to bring the baked goodies! I'm also busy playing with my precious baby girl all day. Another reason is I'm trying to limit my intake of sweets since I'm breastfeeding. I only want to have food that is good for me, but if I do have sweets I also want them to be somewhat good for me too!
Thanks to Hodgson Mill Flour I was able to create the perfect cookie that would fulfill my sweet tooth without making a huge batch and by using Whole Wheat Pastry Flour instead of regular. By adding in some of their Bread flour I was able to achieve a slightly crispy edge, and a chewy delicious cookie. I really think the combination of the two paired nicely. I also used their Whole Wheat Flour to make some Hot Chicken Cutlets for my husband. He didn't even realize it was Whole Wheat!
Back to the cookies. They are incredible. I had to toss out half of the batter because if I didn't I would have eaten EVERY single cookie that came out of the oven. The brown sugar really comes through and shines so much that I didn't even add vanilla. Shocking right? I'm entering these into the Hodgson Mill's Have a GRAIN Holiday Recipe Contest! Brown Sugar Cookies with Chocolate Candy
Makes 1 Dozen
1 Stick Butter, room temperature
1/2 White Sugar
1 Cup Brown Sugar
1 Large Egg
1/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Cup Bread Flour
1 Cup Whole Wheat Pastry Flour
Pinch of Kosher Salt
1/2 Hard Shell Chocolate Candies
Preheat oven to 350 degrees.
In a large bowl cream together the butter and sugars. Add remaining ingredients except candies. Once combined fold in the candies. Using a cookie scoop place them onto a cookie sheeet. Bake for 10-12 minutes and cool on a wire rack. Enjoy!
