Once you have children you tend to stop having those moments – the moments of being alone as a couple. I’m going to be honest, everything we do involves Sweet Baby and even sleeping, as we co-sleep. There’s sometimes when you just want to have those moments together again, but I can’t stand the thought of a babysitter (I can’t even handle being away from baby girl – who am I kidding?!) so hubby and I try to watch movies together before bed. Sweet Baby almost always stays up with us so we don’t have that moment alone. Sometimes a cup of coffee in the morning can bring us those sweet moments together. When I prep ahead it’s perfect to save time so we can connect in the morning and share a few minutes before he heads off to work.
I’ve found the perfect moments for us to be alone are in the morning right before hubby leaves for work. He gets up bright and early every morning at 5am to get ready. Of course I’d love to make him a huge stack of pancakes, waffles, or even eggs and bacon, but let’s be real.. I just nursed a baby all night (she has FPIES and nurses like a newborn) so my energy level isn’t the same as his. I found the perfect solution. A chocolate chip muffin with a peppermint mocha glaze served with a piping hot cup of coffee, light and sweet just how my hubby likes it! Sometimes it’s the simple things that matter most. Also, I can’t believe how quickly pumpkin season went and we’re already thinking peppermint! 🙂
We actually moved closer to hubby’s work – he used to commute about an hour twice a day and then with traffic it was sometimes 2 hours until he got home.. it was crazy! We do look forward to moving back up North, but we’ll wait until he gets a transfer – those hours really add up.
Chris and I both have a sweet tooth, and I much rather eat dessert for breakfast.. after all I’m getting up so early I want to have something sweet to start my day sometimes. Of course the usual mornings we’ll each have a cup of coffee and oatmeal, boring I know!
These muffins are the perfect sweetness to start our day.. and HOW cute are my Mr. and Mrs. Claus Mugs?! I just took them out of storage to use and had to get a mug shot .. cute, cute, cute! Anyway – try these muffins.. people say muffins are ugly cupcakes, but these muffins will make any cupcake jealous. So go enjoy a cup of coffee with a muffin and your love.. 😉
Chocolate Chip Muffins with Peppermint Mocha Glaze

Muffins
- 2 cups flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla bean paste
- 1 cup chocolate chips
Glaze
- 1 cup powdered sugar
- 1/8 cup coffee creamer mocha
- *crushed candy canes for garnish
Instructions
- For the muffins: Using a stand mixer/ or handheld mix all but the chocolate chips together, once combined add chocolate chips.
- Divide into muffin tins using a cookie scoop and bake at 350° for 13-17 minutes or until toothpick inserted comes out with minimal crumbs.
- For the Glaze: Mix together the sugar and creamer in a sauce pan over low heat. Once mixed dip muffins into the glaze and sprinkle with crushed candy canes
