These air fryer twice baked potatoes bring our favorite air fryer side dish to another level filled with mozzarella cheese, garlic, and parsley! All of the delicious seasonings that we put on the outside of our potatoes are also in the mashed potato mixture inside.
INGREDIENTS YOU’LL NEED FOR TWICE BAKED POTATOES
- Wellsley Farms Farm Fresh Idaho Potatoes
- Wellsley Farms Organic Whole Milk
- Wellsley Farms Organic Butter
- Wellsley Farms Mozzarella Cheese Shredded
- Garlic, granulated
- Parsley, dried
- Salt and pepper to taste

We typically have baked potatoes once or twice a week and then I thought I’d remake my childhood favorite cheesy potato baked! We think you’ll absolutely love this recipe, not only does it use fresh potatoes, but you could also add in veggies to the mash.

HOW TO MAKE TWICE BAKED POTATOES
- Slice freshly baked potatoes in half.
- Using a spoon, scoop the potato from each side of the potato skins leaving a little bit of potato on the skin so it can hold up for stuffing.
- Place the potato you scooped out into a mixing bowl.
- Mash the potatoes with butter, milk, and seasonings.
- Once the potatoes are fully mashed you can mix in the mozzarella.
- Bake the potatoes for 10 minutes or until the cheese is melty and slightly browned.
- Garnish with freshly chopped parsley.
WHAT KIND OF TOPPINGS:
Our potatoes have mozzarella cheese, but you could also add broccoli or even do cheddar cheese, bacon, chives, and sour cream.
HOW DO YOU HEAT UP TWICE BAKED POTATOES?
We usually place them into the oven and cover with a little bit of foil over the top, so they don’t burn while the potatoes heat up. You could also microwave them covered with a damp paper towel.

- 4 Idaho Potatoes air fried, Wellsley Farms Farm Fresh
- 1/2 cup Whole Milk Wellsley Farms Organic
- 1 tablespoon Butter Wellsley Farms Organic
- 1 cup Mozzarella Cheese Shredded Wellsley Farms
- 1/2 teaspoon garlic granulated
- 1/2 teaspoon parsley dried
- salt and pepper to taste
Instructions
- Cut freshly air fried baked potatoes into two halves.
- Using a spoon, scoop the potato from each side of the potato skins leaving a little bit of potato on the skin so it can hold up for stuffing.
- Add the scooped out potatoes into a mixing bowl.
- Mash the potatoes with butter, milk, and seasonings.
- Once the potatoes are fully mashed you can mix in the mozzarella.
- Air fry the potatoes for 5-10 minutes at 350 or until the cheese is melty and slightly browned.
- Garnish with freshly chopped parsley and serve.

Simple and good! My teen boys love twice baked potatoes but I rarely take time to make them. I used leftover baked potatoes and used my oven instead of an air fryer. I like that this doesn’t use sour cream or bacon, it’s a different twist than what we’re used to! Yet it’s versatile so I could add other things and get creative with it, too 🙂
