Avocado stuffed with Garlic Balsamic Mushrooms
My husband’s family is all about the protein recipes during the holidays and I’m all about the vegetarian dishes and desserts! I just love anything with vegetables, especially mushrooms! Who doesn’t love avocados? I recently scored avocados for 5 for $3. We had a ton of guacamole but for lunch we’ve been enjoying Avocado stuffed with Garlic Balsamic Mushrooms! This is such a simple side dish that you can easily serve to your guests. Don’t want to serve it in an avocado? You can put this on top of a chicken breast with mashed avocado and then top with the delicious Garlic Balsamic Mushrooms. I couldn’t have made this delicious recipe without Litehouse!
I used Litehouse Garlic to cook my mushrooms with a little olive oil. Towards the end of cooking I poured in a little Balsamic Vinegaratee dressing. Just spoon the mushroom mixture into your halved avocado and stuff! Drizzle a little more dressing and top with feta crumbles. So incredibly delicious and your guests will definitely enjoy. It’s a nice vegetarian side dish instead of just a boring old salad.
The garlic is my absolute favorite. I use it for anything I would usually chop up garlic for. Have you ever purchased the garlic that is already chopped in a liquid? I remember using that years ago and it never tasted fresh, sure it tasted like garlic, but also had a weird off putting taste. This garlic on the other hand tastes like I just chopped it up! I just opened this bottle two days ago and it’s half empty, we love garlic.. can you tell? Ha! I can’t wait to try some more of their products. We always used their dressings!
