    Easy Chicken Broccoli Rice Casserole

    This Cheesy Chicken Broccoli Rice Casserole takes minutes to put together and you can even use leftover chicken breast and leftover white rice.

    Casseroles are the best, you can literally throw a bunch of stuff into a casserole dish and then create something so flavorful and filling. For this we went with something similar to our Broccoli and Cheese Stuffed Chicken Thighs. We paired our oven baked chicken breast with the filling and then topped with cheese and homemade bread crumbs.

    This is the ultimate comfort food and definitely one of our favorite casserole recipes. I’m always looking for ways to add broccoli to our meals. Fresh broccoli that’s steamed is best, but you could also use frozen broccoli and quickly defrost in some hot water. You can use brown or white rice, even add in some wild rice!

    HOW TO MAKE CHICKEN BROCCOLI RICE CASSEROLE

    • Preheat your oven to 350 degrees F.
    • Place cooked rice in the bottom of your casserole dish.
    • Top the rice with cooked chicken breast.
    • Spread broccoli and cheese mixture over chicken.
    • Top cheese mixture with mozzarella.
    • Finish off with breadcrumbs and then spray a little oil over top to help it brown.  (You can also add in some cheese if you’d like)
    • Cover the casserole dish with aluminum foil and bake for 20 minutes covered.
    • Uncover and bake for another 10 minutes to allow the bread crumbs to brown.

    Since we’re using fully cooked chicken breast we only need to heat up the rice and cheese mixture, this happens in about 30 minutes.

    You can easily make it even cheesier by doubling the amount of broccoli and cheese mixture or less cheesy by halving it. Make it a broccoli cheese rice casserole which is a great vegetarian side dish by leaving out the meat and then adding in 2-3 cups of fresh broccoli in its place, it’s a must-try!

    Ingredients

    • 1/2 cup mayonnaise
    • 8 oz cream cheese softened
    • 1 teaspoon garlic granulated
    • 1 cup mozzarella shredded, divided
    • 1 cup broccoli chopped
    • salt + pepper to taste
    • 2 cups white rice cooked
    • 2 chicken breast cooked, cubed
    • 1/2 cup bread crumbs

    Instructions

    • Preheat your oven to 350 degrees F.
    • In a bowl combine the mayo, cream cheese, garlic, 1/2 cup mozzarella, broccoli, salt and pepper.
    • Place cooked rice in the bottom of a greased casserole dish.
    • Top the rice with cooked chicken breast.
    • Spread broccoli and cheese mixture over chicken.
    • Top cheese mixture with 1/2 cup of mozzarella.
    • Finish off with breadcrumbs and then spray a little oil over top to help it brown.  (You can also add in some cheese if you'd like)
    • Cover the casserole dish with aluminum foil and bake for 20 minutes covered.
    • Uncover and bake for another 10 minutes to allow the bread crumbs to brown.
