    Today I’m going to share my daughter’s favorite alternative to chips and dip. Hulk Smash Potato Chips with Avocado is a quick and easy lunch or snack recipe that my daughter goes crazy for! She follows it up with her favorite dessert, MARVEL Chewy Granola Bars!

    Hulk Smash Potato Chips with Avocado

    My daughter is Hulk obsessed!  I’m always looking for fun ways to play with her lunch and she loves the MARVEL Chewy Bars with all her favorite MARVEL characters, especially The Incredible Hulk! She’s always been a fan of the color pink, but recently she says her favorite colors are purple and green, just like the Hulk!

    I’m all about balanced meals and love to give my little sweet a treat with her lunch.  Instead of gummy fruit snacks that stick to her teeth we opt for granola bars.  Plus they have a bit more healthy ingredients in them! You’ll find Captain America, Hulk, Spider Man, Iron Man, Black Widow and Thor on individual bars. I save the Hulk ones for her and then bring all the other ones along in my purse or send them to work with hubby for lunch too. Super Hero Snack Bars are 40% bigger so I usually give her half the bar and then save the other half for another day.  (Based on weight of 24g chewy bar.)  You can find them in regular chocolate chips or peanut butter chocolate chips!  We love them both. 🙂

    We found the MARVEL Chewy Bars at my other home, Target.  I’m literally there every single day since it’s our favorite hang out spot! My daughter even knows most of the cashiers and which one gives the most stickers!  It’s funny, when we go to other stores she now expects stickers from the cashier, just like at Target.  While we were at Target she even spotted her favorite Hulk t-shirt ever and it was on clearance!  Love Target’s pricing!

    I’m so excited to share my daughter’s favorite Incredible Edible Hulk Lunch.  It’s all things green and purple, just like Hulk!

    If I let my daughter eat chips and dip all day she would!  That’s why this recipe is her favorite, since it’s just like chips and dip!  The beautiful purple potatoes and the green avocado instantly make her think of Hulk too!

    French Fry Potato Coins with Hulk Smash Avocado Dip

    Ingredients

    • 3 Purple Fingerling Potatoes
    • Olive Oil
    • 1/2 Avocado
    • Salt

    Instructions

    • Preheat oven to 400.
    • Slice up your fingerling potatoes into thick slices and bake with a little olive oil for about 15-20 minutes, flipping once in between cooking.
    • Meanwhile mash up one avocado and place on a plate.
    • Arrange the potatoes on a plate and give them a smash and a sprinkle of salt.
    • Use potatoes to dip into avocado.

      This definitely looks like a great alternative to having chips and dip. I have never heard of Purple Fingerling Potatoes before.
