Today we’re sharing a Healthy Shopska Salad Recipe! Filled with fresh vegetables that are good for you whether it’s for lunch, dinner, or an easy healthy snack.

We love making traditional Israeli Pepper Salad, but sometimes we love a little bit of cheese and different flavors, so that’s where the Shopska Salad Recipe comes in. It’s very similar in flavor and ingredients to the pepper salad. We love adding extra cheese to each portion of our shopska salad. You may even hear some call this recipe shopska salata.
What is it? It’s a cold salad that is commonly served with many Macedonian and Bulgarian dishes. We could eat this as a dish itself. 🙂
Our mini chef loves fresh vegetables that are crunchy. She was munching on the veggies the entire time we were chopping them up to prepare for this recipe. Her favorite is red pepper. When I was pregnant with her, that was my BIGGEST craving. I could easily eat 2 peppers every day while pregnant; I had to have them! Peppers and watermelon, ha!
This recipe is super simple, and it’s a great healthy recipe for the entire family to enjoy. You can add more or less of any ingredient if you’d like. We like to serve it with beef kabobs, or even burgers!
- 1 large tomato , chopped
- 1 large cucumber , chopped
- 1 green pepper , chopped
- 1 red pepper , chopped
- 1 yellow onion , chopped
- 2 teaspoons parsley , chopped
- 1/4 cup vinegar
- 1/4 cup oil
- salt and pepper to taste
- 1/4 cup feta cheese , chopped
Combine all the ingredients and enjoy!
