    My family daughter could survive off of egg rolls and rice whenever we get takeout. I like to cook at home and so glad we found Van’s Kitchen egg rolls at our local Walmart. I can easily place them in the oven and have a hot egg roll ready to go for my family. Here in our home, we like to have fun with our food, after all, we do Mini Chef Mondays every Monday! 🙂 I thought it would be fun to take our Van’s Egg Rolls and turn them into Egg Roll Skewers. We steamed some broccoli florets, grilled some pineapple and baked our egg rolls. I warmed up a little sweet chili sauce and then even made some fresh rice. We love to top with sesame seeds for even more flavor and texture.

    Ingredients

    • 2 Van's Kitchen egg rolls (we used chicken)
    • 1 cup cut pineapple , grilled
    • 1 cup broccoli , steamed
    • skewers
    • 1 cup white rice
    • sweet chili sauce
    • sesame seeds

    Instructions

    • Bake egg rolls in oven until crispy and according to package instructions.
    • Slice up your egg roll into bite size pieces.
    • Place the egg rolls, pineapple, and broccoli onto skewers.
    • Fill a bowl with rice and play the skewers on top.
    • Drizzle with the sweet chili sauce and sprinkle with sesame seeds.

If you don’t like pineapple and broccoli you could swap out for other veggies like peppers, onions, carrots or even just enjoying the egg roll with skewered chicken is good too! My family loves the combination of salty, sweet, spicy and it’s just a great meal for us. It cooks up quickly and great to make after a busy day.
