In a stand mixer combine warm water, sugar, cinnamon, yeast, and butter.
Allow to sit for 5 minutes so the yeast can do it's thing.
Using the dough hook on the stand mixer slowly mix and add in the flour.
Knead for 5 minutes in the mixer and then place into a large greased bowl (using oil) and covered with a clean kitchen towel.
Leave the dough in a warm area and allow to rise for an hour.
Preheat the oven to 425 degrees F.
In a pot of boiling water add in the baking soda.
Shape the pretzels however you'd like and then add them into the water mixture, boiling for about 20-30 seconds.
Remove the pretzels from the water using a slotted spoon and place onto a large cookie sheet with a silpat or parchment paper.
Bake for 15 minutes or until browned.
Once the pretzels are done place them into a large bowl (one that has a lid) with butter and cinnamon sugar.
Place the lid on and shake, shake, shake!
If you want more of a sugary coating you can coat the pretzels as you take them out of the water and before placing into the oven, or use more butter. We like the little amount of sugar since there's brown sugar and cinnamon inside the pretzels.
