Homemade Home Fries
Homemade Home Fries served up with fried eggs and peppers. This is a filling meal that's perfect for a family breakfast.
- 2 Potatoes , chopped
- coconut oil , for frying
- 1/4 Teaspoon Sweet Paprika
- Salt and Pepper to taste
Place chopped potatoes into a pan and cover with water, boil potatoes until fork tender.
Once potatoes are fork tender place them on a cloth (or paper towel) and let the moisture steam away for a few minutes. (By doing this you will reduce the water content and ensure a quick and easy crispy crust when they hit the pan.)
Take your chopped potatoes and toss them into a hot pan with a little coconut oil and fry until crispy.
Sprinkle with seasonings and enjoy
