Ingredients

Sauce Recipe

  • 1 tablespoon olive oil
  • 1 cup of washed and sliced leeks
  • 1 bunch of celery sliced about 5-6 stalks
  • 3 shredded carrots
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 3 diced roma tomatoes
  • 2 cans crushed tomatoes 1lb can
  • 1 can tomato sauce 1lb can
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon sugar

For the turkey

  • 1 teaspoon olive oil
  • 1 lb lean ground turkey
  • 1 teaspoon worcestershire sauce
  • 1/2 teaspoon cumin
  • salt and pepper

Instructions

  • In a large stock pot heat olive oil and add in leeks, celery, carrots, onion, and garlic. 
  • Once translucent add in fresh and canned tomatoes, as well as seasonings. 
  • Cook for about an hour and a half. 
  • Once time is elapsed start the turkey. In a skillet with olive oil brown turkey with Worcestershire sauce and seasonings. 
  • Once turkey is fully cooked add to sauce and cook for another hour and a half.
  •  Start making pasta and once done pour sauce over pasta - garnish with fresh basil, enjoy!
