Ingredients

Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla bean paste
  • 1 cup chocolate chips

Glaze

  • 1 cup powdered sugar
  • 1/8 cup coffee creamer mocha
  • *crushed candy canes for garnish

Instructions

  • For the muffins: Using a stand mixer/ or handheld mix all but the chocolate chips together, once combined add chocolate chips.
  •  Divide into muffin tins using a cookie scoop and bake at 350° for 13-17 minutes or until toothpick inserted comes out with minimal crumbs.
  • For the Glaze: Mix together the sugar and creamer in a sauce pan over low heat. Once mixed dip muffins into the glaze and sprinkle with crushed candy canes
