Pancake Muffins are great on the go breakfast for the whole family. Just bake the pancakes in a muffin tin with your favorite toppings for a fun breakfast treat.
- 1 cup all purpose flour
- 2 teaspoons baking powder
- 3 tablespoons sugar
- 3/4 cup milk
- 1 large egg
- 2 tablespoons I Can't Believe It's Not Butter!® Spread
- 1 teaspoon vanilla extract
- *toppings of choice
Preheat oven to 350 degrees F.
In a large bowl combine the flour and baking soda together.
Add the sugar, milk, egg, butter spread, and vanilla extract and mix until combined.
Fill a muffin pan with 12 cupcake liners and fill about 1/3 of the way.
Top pancake muffins with your favorite toppings, we use cinnamon sugar, chocolate chips, sprinkles, and even leave some plain.
Bake for 15-17 minutes or until toothpick comes out clean.
