Sweet Potato Waffles with Brown Sugar Ham

Fluffy Sweet Potato Waffles with Orange Brown Sugar Ham makes for the ultimate breakfast! Top with some orange honey butter and a drizzle of maple syrup to complete the meal.

Ingredients

Orange Brown Sugar Ham

  • 1 quarter Smithfield Anytime Favorites Quarter Ham
  • 1/4 cup orange juice
  • 1/4 cup brown sugar

Sweet Potato Waffles

  • 1 1/2 cups mashed sweet potatoes
  • 1 egg
  • 1 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 3/4 cups flour
  • 1 teaspoon cinnamon
  • 1 tablespoon baking powder
  • 1 tablespoon brown sugar
  • 1 pinch salt

Instructions

Orange Brown Sugar Ham

  • Place the ham in an oven-safe baking dish.
  • Mix together the orange juice and brown sugar and then pour over the ham.
  • Add orange slices if desired to make a pretty presentation.
  • Cover the ham and if you would like crispy edges you can remove the foil towards the end.
  • Place the ham in a 350 °F oven and bake until the internal temperature of the ham reaches 145 °F.
  • Once the ham is finished spoon the brown sugar glaze over the ham and then serve.

Sweet Potato Waffles

  • Mix together the dry ingredients and the wet ingredients separately.
  •  Once the wet is combined you can whisk in the dry ingredients.
  • Allow the batter to poof for 5-10 minutes before adding to the waffle maker.
  • Use a 3/4 cup measuring cup to pour the batter into the waffle iron and cook for about 1 1/2 minutes per side - 3-4 minutes total.
  • Serve with cooked ham, fresh orange honey butter, and warm maple syrup.
