These Garlic Mashed Potatoes are loaded with roasted garlic and butter, making them the perfect potato side dish. You can easily make these into vegan mashed potatoes that are also dairy free.
4tablespoonsbutterwe use country crock plant butter
1teaspoonseasoned saltor salt to taste
1/2teaspoonblack pepper
Instructions
Preheat the oven to 400 degrees F.
Remove the outer layers of loose skin on the garlic and then use a knife to cut close to the tops to expose the inside of the garlic bulb. Place it onto a piece of foil and drizzle with the oil. Wrap tightly in the foil and bake for 35-40 minutes. Remove from the oven and open the foil allowing the garlic to cool.
In a large saucepan, boil the potatoes until they are easily pierced with a fork and slightly fall apart, usually about 15 minutes. Drain the water.
Squeeze the garlic out into the saucepan with the potatoes and then add the whole milk, butter, seasoned salt, and pepper. Mash the potatoes on medium heat until everything is combined. Add more milk and season as needed.
