This easy Breakfast Casserole recipe is perfect for any occasion and only takes 10 minutes to put together using eggs, sausage, cheese, onions, and shredded potato hashbrowns.
1 1/2cupsshredded cheddar cheesedivided - we use follow your heart finely shredded for dairy free
1 - 1 1/2cupswhole milkuse more if you like a softer casserole (we use the full amount), we use full fat oat milk for dairy free
2potatoesshredded, you could also use 1-2 cups of frozen shredded potatoes that are defrosted
1teaspoonsalt
1/2teaspoonpepper
Instructions
Preheat your oven to 350 degrees F.
Grease a 9x13 pan with butter and set aside.
In a skillet with oil, brown the sausage until you can cut through them, and dice it into bite size pieces. In the same pan, saute the onions just starting to brown and remove them from the heat.
Add all of the ingredients to a bowl with the chopped sausage and onions, mix until combined.
Pour the mixture into the prepared baking dish and then bake for 45 minutes covered.
Add 1/2 cup more cheese to the top and bake for another 10 minutes.
