Chicken and Quinoa Stuffed Tomato
This flavorful Chicken and Quinoa Stuffed Tomato has tons of flavor by Italian Dressing and it's a healthy meal!

- 1/2 Onion
- 6 Tomatoes made into cups
- 1 Portobello Mushroom
- 2 Chicken Breasts cooked
- 2 Cups Quinoa Cooked with 2 tablespoons of Zesty Italian Dressing in water
Chop up your onions and mushroom, and toss into a skillet with olive oil.
Add in the inside of the tomatoes that you used for cups.
Once the vegetables are cooked down add in the chicken breasts (cut into chunks!) and cook until heated through.
Once the chicken is warm toss in the quinoa and serve in tomato cups. Drizzle with a little Zesty Italian.
