  • Dressing:
  • 1 Avocado
  • 1/3 Cup Olive Oil
  • 1/3 Cup Water
  • 1 Teaspoon Mustard
  • 2 Tablespoons Raw Apple Cider Vinegar
  • 2 Teaspoons Nutritional Yeast can use parmesan cheese if you'd like
  • 3 Cloves Garlic
  • Salt and Pepper to taste
  • Salad + Bowls
  • 4 Peppers different colors are more fun!
  • 1 Stalk of Celery chopped
  • 1 Carrot chopped
  • 1 Red Pepper chopped
  • 2 Hearts of Romaine chopped


  • Dressing:
  • In a blender or food processor blend all the salad ingredients together until smooth.
  • For pepper salad bowls:
  • Make sure all your vegetables are nice and clean. Cut the tops of your peppers and remove all the insides so you have a bowl.
  • Toss the romaine with the chopped vegetables and about 2-3 tablespoons of the dressing. Divide the salad into the pepper bowls and serve.
