Salad Stuffed Pepper Bowls with Creamy Avocado Dressing – a fun kid-friendly way to get your child to eat more greens.
Short cuts in the kitchen are essential these days. Kay keeps me busy and I love spending all the time I can with her. When she’s sleeping I’m hard at work blogging, cleaning the house, or cooking! I love cooking from scratch whenever possible, but sometimes I really just don’t have the time. Kay can be in the living room for 5 minutes and it looks like a tornado came in, ha! I love serving my family wholesome delicious meals, and for a nice treat for them and my time management we turn to Blake’s All Natural! We purchase them right at Target, which is super convenient since it’s so close! Kay even asks for them when we pass the freezer section now.
We really try to eat healthy, as well as choose our products wisely. I trust the brand and I love their products. In fact Kay has never really eaten too much, but just July she started eating and swallowing everything – this is huge for her FPIES food allergy. She especially loves their Shepherd’s Pie and Old Fashioned Macaroni and Cheese, we just knew she’d love the Meatloaf Dinner Casserole!
Her favorite protein is beef and she’s just like her mama with a love for potatoes! These garlic mashed potatoes with skin make you think it was prepared in your own kitchen.
I quickly put them in the oven (we do not own a microwave by choice, but if you do go right ahead and put them in!) and then started making our salad. Kay loves to help me in the kitchen. She made sure to eat almost an entire pepper while I was chopping all the veggies for our salad. I never saw a kid ask for peppers, carrots, and celery to just munch on. She loves her veggies. Due to her FPIES food allergy we typically make our own dressings and she loves this Creamy Avocado dressing we make! We used it in our Salad Stuffed Pepper Bowls!
It has all ingredients that she can have!

- Dressing:
- 1 Avocado
- 1/3 Cup Olive Oil
- 1/3 Cup Water
- 1 Teaspoon Mustard
- 2 Tablespoons Raw Apple Cider Vinegar
- 2 Teaspoons Nutritional Yeast can use parmesan cheese if you'd like
- 3 Cloves Garlic
- Salt and Pepper to taste
- Salad + Bowls
- 4 Peppers different colors are more fun!
- 1 Stalk of Celery chopped
- 1 Carrot chopped
- 1 Red Pepper chopped
- 2 Hearts of Romaine chopped
Instructions
- Dressing:
- In a blender or food processor blend all the salad ingredients together until smooth.
- For pepper salad bowls:
- Make sure all your vegetables are nice and clean. Cut the tops of your peppers and remove all the insides so you have a bowl.
- Toss the romaine with the chopped vegetables and about 2-3 tablespoons of the dressing. Divide the salad into the pepper bowls and serve.

It’s full of good things for her and she loves to dip veggies right in! I think letting kids play with their food is the best way to get them to eat them. Even more I think the more fun the food is the better chances you have of them liking it! That’s why I love to take a little more time on making things fun, and letting Blake’s help me out with the main meals sometimes! 🙂 While our Meatloaf was cooking in the oven we had time to laugh and cut up veggies for our salad, and even make our own homemade pepper salad bowls. You can just pick them up and eat right out of it like an apple! In fact Kay eats her peppers like apples. You can certainly use a fork if you’d like, but using your hands is a bit more fun.
