Learn how to make Matzo Brei just like my grandparents taught me! Serve with applesauce, jam, sour cream, or a kid’s favorite – ketchup!
What is Matzo Brei?
Matzo Brei is a delicious Jewish breakfast made up of matzo, eggs, water, and a bit of salt and pepper for savory or sugar for sweet. The matzo is quickly soaked with water, broken up, and then tossed with whisked eggs. It’s then fried in a skillet with a bit of oil. Some like it light and fluffy, and some like it crunchy and crispy! Almost like the great matzo ball debate, sinkers, or floaters.

- Large Eggs – You can use Just Egg for vegan matzo brei.
- Avocado Oil – We use avocado oil as it’s a good high smoke point oil.
- Matzo – We stock up on matzo during Passover. It’s a great way to have matzo throughout the year!
- Water
- Salt and Pepper to taste
How to make Matzo Brei
Start off by scrambling the eggs in a medium mixing bowl.
Heat avocado oil in a skillet on medium heat.
Next, quickly soak the matzo in running water.
After soaking, break the matzo into bite-size pieces and add to the scrambled eggs.
Toss to coat the matzo and add salt and pepper to taste.
Place the matzo brei mixture into the hot skillet and cook like a pancake for 3-5 minutes.
The bottom should be nicely browned and crispy. Flip and then break apart with your spatula.
Make a well in the matzo brei in the skillet and add the remaining avocado oil. Toss and cook for another 2 minutes.
Season to taste and serve as desired!
Recipe tips and variations
- You can make a sweet matzo brei or a savory matzo brei. For sweet, instead of salt and pepper, you can use cinnamon sugar or plain sugar.
- Depending on how you make it, you can serve matzo brei with jam, jelly, ketchup, applesauce, or sour cream.
- If you want a fluffier matzo brei use 2 eggs to 1 sheet of matzo.
- If you increase the eggs and break the matzo down more, you can also make fun matzo brei pancakes.
Storage and reheating tips
- Refrigerate: Store any leftovers in an air-tight container in the refrigerator and enjoy within 2 days.
- Reheat: To reheat matzo brei you can do so in a skillet with some oil or in an air fryer at 375 for 3-4 minutes.
How to serve
Matzo Brei is traditionally served with applesauce and sour cream. You can serve sweet matzo brei with jam or jelly. Kids like it with ketchup too! We love serving it with potato latkes as well.
Frequently asked questions
For a crispy matzo brei we use 1 piece of matzo per 1 large egg. If you want it to be a fluffier matzo brei use 1 piece of matzo per 2 large eggs.

- 4 large eggs
- 2 tablespoons avocado oil divided
- 4 sheets matzo
- water

Instructions
- In a medium mixing bowl scramble the eggs and set aside.
- Add 1 tablespoon of avocado to a cast iron skillet and heat on medium heat.
- Run a piece of matzo under cold running water in the sink, soaking both sides. Once the matzo is soaked, break the matzo into bite-size pieces and add it to the scrambled egg bowl. Repeat with each piece of matzo.
- Toss the matzo and egg mixture. Add salt and pepper to taste and then pour into the hot skillet.
- Let the matzo brei cook like a big pancake and flip after 3-5 minutes or once the bottom is browned. This will give you a crispy matzo brei.
- After flipping the matzo brei, use your spatula to break it up into pieces.
- Make a well in the center and add the remaining 1 tablespoon of avocado oil. Toss and cook for another 2 mintues.
- Season to taste and serve.
