  • 3 boneless skinless chicken breasts
  • 1 large or 2 medium tomatoes sliced
  • 1 cup mozzarella shredded
  • 1/4 teaspoon basil
  • 1/4 teaspoon parsley
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil


  • Preheat oven to 400 degrees F.
  • Place the chicken breasts onto a parchment lined baking sheet and cover with olive oil and seasonings.
  • Bake the chicken for 25-30 minutes, until a thermometer reaches 165 degrees F in the thickest part of the chicken breast.
  • Once the chicken breast is fully cooked add on some sliced tomatoes and shredded mozzarella. Sprinkle with a little more parsley if you want more green on top.
  • Bake the chicken for another 5 minutes or until the cheese is fully melted.
