In a medium mixing bowl scramble the eggs and set aside.
Add 1 tablespoon of avocado to a cast iron skillet and heat on medium heat.
Run a piece of matzo under cold running water in the sink, soaking both sides. Once the matzo is soaked, break the matzo into bite-size pieces and add it to the scrambled egg bowl. Repeat with each piece of matzo.
Toss the matzo and egg mixture. Add salt and pepper to taste and then pour into the hot skillet.
Let the matzo brei cook like a big pancake and flip after 3-5 minutes or once the bottom is browned. This will give you a crispy matzo brei.
After flipping the matzo brei, use your spatula to break it up into pieces.
Make a well in the center and add the remaining 1 tablespoon of avocado oil. Toss and cook for another 2 mintues.
