Boxty Recipe
This boxty recipe is kid friendly for St Patrick's Day! We serve it with grilled chicken tenders so kids can enjoy Irish recipes during the holiday too!

Ingredients

potatoes
mashed

potato
shredded

all purpose flour
1/2
cup
buttermilk
salt + pepper to taste
Instructions
Place the mashed potatoes into a large bowl.
Peel and shred/grate the raw potato into a mesh strainer.
Sprinkle a little salt onto the raw potato and then press the potato into the strainer to drain the excess water from potato. Discard potato water.
Mix the mashed potatoes, strained raw potatoes, flour, buttermilk, and seasonings together in a large bowl.
Once the mixture is combined you can start to cook.
Heat some oil or butter in a skillet and then drop the desired amount of boxty into the pan.
Cook the boxty potato pancakes until golden brown on both sides, about 4-5 minutes per side.
We like to serve with Cooked Perfect Fire Grilled Chicken Tenders.
