    This boxty recipe (Irish potato pancakes) is kid friendly for St Patrick’s Day! We serve it with grilled chicken tenders so kids can enjoy Irish recipes during the holiday too!

    Irish Boxty with Grilled Chicken

    On St Patrick’s Day, most make corned beef and cabbage, Shepherd’s pie, Irish Stew, and even Colcannon. We try to limit red meat in our house so things like corned beef and sausage are rarely served, we prefer chicken. Not to mention many of us suffer from digestive issues, chicken is much easier to digest. I like to serve a traditional Irish appetizer called Boxty and serving it with some delicious Cooked Perfect Fire Grilled Chicken Tenders!

    For St Patrick’s Day, I also make colcannon and am sure to make enough mashed potatoes to make some boxty. Adults and kids love handheld food and you can make the Irish Boxty as big or as little as you like.boxty recipe

    If I make a big one I can cut it into pieces like a pizza, or if I make small ones kids can have one without needing to cut. They can just grab whatever they like, some chicken tenders and boxty, please!

    What is Boxty?

    Boxty is an Irish Potato Pancake. A traditional boxty recipe is fried in a pan until the potato boxty is golden brown on both sides. What’s in a boxty recipe? Boxty is made up of mashed potatoes, raw grated potato, flour, buttermilk, salt and pepper. Some also put eggs into their boxty recipe. While boxty is a potato pancake, that doesn’t mean it’s for breakfast, it’s actually traditionally served as an appetizer or side dish with dinner.

    How to make boxty

    Combine all of the ingredients into a bowl and mix. Once the mixture is combined you are ready to pan fry your the boxty potato pancakes.

    Ingredients

    • 1 cup potatoes mashed
    • 1 large potato shredded
    • 1 cup all purpose flour
    • 1/2 cup buttermilk
    • salt + pepper to taste
    Prevent your screen from going dark

    Instructions

    • Place the mashed potatoes into a large bowl.
    • Peel and shred/grate the raw potato into a mesh strainer. 
    • Sprinkle a little salt onto the raw potato and then press the potato into the strainer to drain the excess water from potato. Discard potato water.
    • Mix the mashed potatoes, strained raw potatoes, flour, buttermilk, and seasonings together in a large bowl.
    • Once the mixture is combined you can start to cook.
    • Heat some oil or butter in a skillet and then drop the desired amount of boxty into the pan. 
    • Cook the boxty potato pancakes until golden brown on both sides, about 4-5 minutes per side.
    • We like to serve with Cooked Perfect Fire Grilled Chicken Tenders.
