These slow cooker BBQ chicken thighs make an easy family dinner. I love recipes like this because you can toss everything into the slow cooker and let it do most of the work.

The chicken comes out juicy and flavorful, perfect for sandwiches, sliders, or serving over mashed potatoes. I love making it for meal prep or when I know we’ll have a busy homeschool day and dinner will be ready when we get home!

The homemade BBQ sauce is what makes this recipe so good! I use simple pantry staples like ketchup, brown sugar, vinegar, and Worcestershire sauce to create a flavorful sauce with the right balance of sweetness, tang, and smokiness.

Quick Bites About This Recipe

Skill Level: Easy, with minimal prep.
Swaps: Chicken breasts work instead of thighs.
Make Ahead: Prep the sauce up to 2 days ahead.
Freezer Friendly: Freeze for up to 3 months.
Variations & Substitutions: Add cayenne for heat or reduce the sugar for a tangier sauce. You can also use honey instead of brown sugar.

Slow Cooker BBQ Shredded Chicken Ingredients

Boneless Skinless Chicken Thighs: These stay juicy and tender in the slow cooker, making them perfect for shredding. You can use 6-12 thighs depending on how much chicken you need. Chicken breasts work too, but they may cook faster. I like going for 12 with meal prep.
Brown Sugar: Adds sweetness and balances the vinegar. Light or dark brown sugar works, but dark brown sugar gives the sauce a richer flavor. You can also use honey instead.
Ketchup: The base of our homemade BBQ sauce! It adds tomato flavor, sweetness, and that classic BBQ sauce consistency.
Mustard: Yellow mustard adds a little tang and balances the sweetness. Dijon mustard works too.
Low Sodium Soy Sauce: Adds savory flavor and depth without making the sauce too salty. Gluten free tamari is a great alternative.
Water: Helps thin the sauce during cooking. We’ll thicken it at the end with a cornstarch slurry.
Vinegar: Gives the BBQ sauce its tangy flavor. Apple cider vinegar is slightly milder, while white vinegar has a sharper tang.
Worcestershire Sauce: Adds a savory, slightly tangy flavor that makes homemade BBQ sauce extra delicious.
Smoked Paprika: Adds smoky flavor without needing a grill or smoker. Regular paprika works, but won’t have the same smokiness.
Granulated Garlic: Adds garlic flavor throughout the sauce. Garlic powder works just as well.
Cornstarch: Our trick for thickening the BBQ sauce! Mix it with cold water before adding it during the last 30 minutes so the sauce coats the shredded chicken.

In a mixing bowl, combine the brown sugar, ketchup, mustard, low-sodium soy sauce, water, vinegar, Worcestershire sauce, smoked paprika, and granulated garlic.

Whisk until the brown sugar is fully incorporated. You can also mix it right in the crockpot, but be careful not to scratch the bottom.

setting slow cooker to low for 4 hours.

Cook on LOW for about 4 hours, until the chicken is fully cooked and tender. The chicken should reach an internal temperature of at least 165°F. Check it before the final 30 minutes so you can shred it once it’s ready.

During the last 30 minutes, shred the cooked chicken using two forks. You can do this right in the slow cooker, or transfer the chicken to a cutting board, then return it to the sauce.

Storing and Reheating (If There’s Any Leftovers!)

Refrigerate: Store leftover BBQ shredded chicken in an airtight container in the refrigerator for up to 3-4 days. Keep the chicken mixed with the sauce to stay juicy.
Freeze: Freeze cooled shredded chicken with the sauce in freezer-safe containers or bags for up to 3 months for the best quality.
Reheat: Warm in a saucepan over medium-low heat or microwave in short intervals until heated to 165°F. Add a splash of water if the sauce has thickened too much.

Recipe Tips and Notes

  • Use chicken thighs: They’re naturally juicy and shred beautifully after slow cooking. Chicken breasts work too.
  • Use 6 thighs for extra saucy chicken or up to 12 thighs for meal prep.
  • Apple cider vinegar gives a slightly milder flavor, while white vinegar adds a sharper tang.
  • Thicken at the end: Always mix cornstarch with cold water before adding it to the hot sauce to prevent lumps.
  • Reduce the brown sugar to 1/3 cup for a less sweet BBQ sauce.
  • A pinch of cayenne pepper or some crushed red pepper flakes adds a nice kick.
  • Chicken should reach at least 165°F, per USDA guidelines. Use a meat thermometer to check the thickest piece.
  • Start with thawed chicken: Thaw frozen chicken in the refrigerator before adding it to the slow cooker for safe, even cooking.

1/2 cup brown sugar, 1 1/2 cups ketchup, 1 tablespoon yellow mustard, 1 tablespoon low sodium soy sauce, 1/3 cup water, 1/2 cup white vinegar, 2 teaspoons Worcestershire sauce, 1 teaspoon smoked paprika, 1/2 teaspoon granulated garlic
  • Pour the homemade BBQ sauce over the chicken thighs. Use a spoon to coat the chicken evenly, making sure the sauce gets between the pieces. Cover the slow cooker with the lid.
  • Cook on LOW for approximately 4 hours total, until the chicken is fully cooked and tender. Check the chicken before the final 30 minutes. It must reach at least 165°F internally before shredding. Continue cooking if needed until the chicken is tender enough to shred easily.
  • During the last 30 minutes, once the chicken is fully cooked, shred it directly in the slow cooker using two forks. Alternatively, carefully transfer the chicken to a cutting board, shred it, and return it to the BBQ sauce. Stir to distribute the chicken evenly.
  • In a small bowl, whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water until completely smooth. For a thicker sauce, use up to 2 teaspoons of cornstarch. Make sure there are no lumps before adding the slurry.

  • Pour the cornstarch slurry into the slow cooker and stir thoroughly to combine it with the BBQ sauce and shredded chicken. Cover and continue cooking on HIGH for approximately 30 minutes, allowing the sauce to thicken slightly and coat the chicken.
  • Stir the shredded chicken once more to evenly distribute the thickened sauce. Taste and adjust the seasoning if needed. Serve warm on hamburger buns, slider rolls, baked potatoes, rice, or with your favorite side dishes.

Notes

  • Substitutions: Boneless, skinless chicken breasts can replace thighs, but they may cook faster. Apple cider vinegar or white vinegar both work. Gluten-free tamari can replace soy sauce if needed, but check the remaining condiments for gluten.
  • Chicken thighs: I used organic chicken thighs, which tend to be smaller than regular.
  • Storage: Refrigerate leftover chicken in an airtight container for up to 3-4 days. Freeze with the BBQ sauce for up to 3 months for the best quality.
  • Reheat: Warm in a saucepan over medium-low heat or microwave in short intervals until the chicken reaches 165°F. Add a splash of water if the sauce becomes too thick.
  • Cornstarch: Start with 1 teaspoon for a lightly thickened sauce or use 2 teaspoons for a thicker consistency.
  • Food Safety: Cook chicken to at least 165°F, per USDA guidelines. Use a meat thermometer to check for doneness before shredding.
