
Happy Birthday to me!! Okay so if there's something I want for my birthday these cookies are it. Hold the cake, hold the ice cream unless you're sandwiching it between two of these bad boys!
In June I attended BakeSpace's TECHmunch. Chris actually came along with me, an early birthday present! He came since I couldn't really type or take notes because I was still healing from my fingertip injury.
Despite how much he said he was only doing it for me since my finger was hurt, he actually liked it after coming! He enjoyed much more than I thought and plans to attend the next NYC TECHmunch as well! Not only did we have an incredible time meeting other bloggers and brands, we also ate some really amazing food. One person I was really looking forward to hearing speak was Jacque Torres, but he had to cancel. He did however send over his amazing cookies. When I tell you this is the most amazing cookie you'll ever have.. Please believe me. No cookies can compare, sorry! After all, the man does know his chocolate!
I searched the internet as soon as I got home and then found a recipe online. Now I know everyone isn't going to have Pastry flour or large blocks of chocolate on hand so I substituted ingredients since I didn't have them either. I was happy that they turned out delicious even with substitutions, however I do plan to make them with the called for pastry flour and chunks of chocolate. Either way you make them you won't be disappointed Every bite is filled with bits of chocolate. Let me know if you try them!!
1lb Unsalted Butter, room temperature
1 3/4 Cups Granulated Sugar
2 3/4 Cups Packed Light-Brown Sugar
4 Large Eggs
3 cups plus 2 tablespoons Pastry Flour (I used Substituted Ingredients mentioned above)
3 Cups Bread Flour
1 Tablespoon Salt
2 Teaspoons Baking Powder
2 Teaspoons Baking Soda
1 Teaspoon Pure Vanilla Extract
2lbs Semi-Sweet Chocolate, coarsely chopped (I used chocolate chips)
Preheat oven to 350 degrees. Line baking sheets with parchment paper or silpat.
In a stand mixer or a large bowl with an electric mixer blend together the butter and sugars. Add eggs one at a time making sure to mix well after each one. On a low speed add in flours, baking powder, baking soda, vanilla, and chocolate chips; mix well. 

Using a large or medium cookie scoop place the cookies on the cookie sheet about 2 inches apart. Bake until they are lightly brown, about 20 minutes for large cookies and 15 for smaller. Cool on wire rack and enjoy.

I think chocolate chip, peanut butter cookies are my most favorite cookies. I'm a milk chocolate lover, so we don't use semi sweet chips. These look delicious :)
