    It’s a new school year and this is the first year my kid wants something other than just turkey and cheese or mac and cheese for lunch. This lunch actually has no cheese in it at all! My mini chef is obsessed with tuna salad and while we love that she loves something, tuna has a ton of mercury. We like to swap that out and make our homemade easy chicken salad recipe.

    You can make this easy chicken salad with leftover chicken or even make chicken just for this salad. I usually use 1 chicken breast and that’s enough for her lunch and a lunch for me as well. I just chop the chicken up and it’s good to go! You could do larger chunks, but we like to have it pretty small.

    If I’m making it for the whole family I’ll do 4-5 chicken breasts and we’ll have it for up to 3 days. It’s even better the next day so we usually make the night before so all the flavors can develop.

    The one thing we worry about sending our kids to lunch with is something that can easily spoil. Lately, I’ve been hearing about lots of schools not having a microwave to heat up the lunch for kids and that means we need to make sure their food stays within a safe temperature too if we’re serving them a cold lunch.

    Ingredients

    • 1 chicken breast chopped
    • 1 lemon juice of
    • 1 teaspoon parsley fresh, chopped
    • 1-2 tablespoons mayo
    • 1/8 cup celery chopped
    • 1 tablespoon onion chopped
    • salt + pepper to taste
    Prevent your screen from going dark

    Instructions

    • Place all the ingredients into a large bowl.
      Mix ingredients together.
      Store in the fridge until ready to eat.

      Can u use something else besides mayo for the chicken salad

        We have used yogurt or avocado too! Just know that it will taste a little different than regular chicken salad with mayo πŸ™‚

      I don’t have fresh parsley. How much dried parsley would you use?

        Usually, we’d say half, but since this is dried and has a different mouth feel in a salad we’d go with 1/4 teaspoon. πŸ™‚

        Yes, I’d omit the lemon juice and see how it tastes.
