If there’s one thing I miss more than my grandma’s hugs, it would have to be her food.  She could feed your belly while feeding your soul.  I miss our talks about food, we could go on and on talking about a new recipe.   Her signature dish, the one that could make you feel at home when you’re a million miles away was her salad dressing.  I make it for my family regularly, just like she did for us.  Star Pairings Extra Virgin Olive Oil for Vegetables worked beautifully as the oil in her recipe.  Grandma used to use vegetable oil and was very adimant about using only that, however she never had such a light olive oil meant just for her salad.  She would be not only impressed by the replacement, but delighted but the taste.

We purchased the Star Fine Foods Extra Virgin Olive Oil right at our local Walmart, where they also carry a variety for Poultry/Fish and Beef/Lamb.

The Vegetable one is perfect and will definitely be a permanent staple in our house now.  Their pairing oil really takes the guess work out of it all.  Using Arbequina, Hojiblanca, and Picual these olive oils each serve a different purpose .  I once purchased an olive oil meant for dressings that wasn’t and the flavor was so strong.  I gagged and threw away the entire salad.  No wonder grandma forbid it!

I could hear her now.. “Courtney, what are you doing!”  I would explain the “madness” and insist she try it.. where then we would both just laugh and enjoy.  What a time we would have.   Since Sweet Baby is on a gluten free diet and doesn’t eat butter or margarine due to her FPIES this oil is even perfect for her to trial soon!   Plus it’s olive oil, which is a healthier option over the other choices.

I still can’t believe I lost my grandmother when I was pregnant with Sweet Baby.. I was in the middle of finding out if we were expecting a boy or girl and she had a surgery that just went horribly wrong.  Instead of helping, it did more damage.  My memories of my grandmother are great ones – ones that I’ll treasure forever as long as I have my mind.   While I enjoy this salad I think of her, and all the times, she always thought of me.  So without further dragging on.. My grammy’s salad recipe, I hope you enjoy as much as we do!

As grandma would say a little of this a little of that. While the following is the amount I use no one will ever know how much grandma used to make her salad dressing. Make it our own, and most importantly.. enjoy.

What sweet memories you have of your Grandma. I have really been enjoying the Arbequina blend, I used it in a squash recipe and it really enhanced the flavor.

I lost my grandmother many years ago, now, but have such fond memories of her. I use olive oil in vinaigrette dressings all the time.

Interesting recipe…I usually add some type of vinegar to my oil based dressing to balance the flavor.

Simple and absolutely delicious I’m sure. I think my oldest is the only kid alive who hates ranch and prefers an oil based salad dressing.
