Tater Tot Breakfast Casserole with Veggie Taters is great for breakfast or brunch. Filled with veggie taters, eggs, peppers, onions, broccoli, and cheese!

- 1/2 teaspoon butter for greasing the pan
- 1 box McCain© Potato, Potato, Broccoli and Cheddar Veggie Taters™
- 8 large eggs
- 1/3-3/4 cup milk 3/4 cup if you like lighter eggs
- 1 cup broccoli chopped
- 1 cup green pepper chopped
- 1 cup red pepper chopped
- 1 cup onion chopped
- 1 cup cheddar cheese shredded
Preheat oven to 350 degrees F.
Grease a 9x9 or 9x13 pan with butter and then add in the veggie taters.
In a large bowl combine the eggs and then whisk until they're scrambled.
Add in the milk, peppers, onions, broccoli, cheese and mix until combined.
Pour over the veggie tots in the baking dish and bake for 45 minutes to 1 hour or until a toothpick inserted into the center comes out clean. (9x13 pan will cook in 30-45 minutes)
