This recipe is quick and easy and the whole family can make it together. Gather up all the casserole ingredients, and then simply place into your favorite casserole. It starts with Potato, Broccoli, and Cheddar Veggie Taters. Then, all the veggies my kiddo picks out plus eggs, milk, and don’t forget the cheese! This is a pretty wholesome recipe for the whole family and I just love it when the kids enjoy it, too. You could even bake up some extra Potato, Broccoli, and Cheddar Veggie Taters to serve on the side. Everyone will have a happy tummy that’s filled and ready for the day.
HOW TO MAKE TATER TOT BREAKFAST CASSEROLE
- Preheat oven to 350 degrees F.
- Grease a 9×9 or 9×13 pan with butter, and then add in the veggie taters.
- In a large bowl, combine the eggs and whisk until they’re scrambled.
- Add in the milk, peppers, onions, broccoli, cheese and mix until combined.
- Pour over the veggie tots in the baking dish and bake for 45 minutes to 1 hour or until a toothpick inserted into the center comes out clean.

CAN I ADD MEAT TO THIS CASSEROLE?
This is a vegetarian breakfast casserole, but you can add meat. Some meat options would be ham, turkey, sausage, or bacon. You can even use plant-based meat options as well.
HOW TO STORE LEFTOVER BREAKFAST CASSEROLE
You can reheat in the microwave or in the oven at 350F degrees for 15-20 minutes.

- 1 box McCain© Potato, Potato, Broccoli and Cheddar Veggie Taters™
- 8 large eggs
- 1/3-3/4 cup milk 3/4 cup if you like lighter eggs
- 1 cup broccoli chopped
- 1 cup green pepper chopped
- 1 cup red pepper chopped
- 1 cup onion chopped
- 1 cup cheddar cheese shredded

Great recipe! This served as a guide to use up some veggies leftover from a family gathering. I loved how adaptable this was! I used a smaller casserole pan (7x11ish) with approx 25-30 regular tater-tots spaced apart on the bottom of the buttered dish. I used 6 lg eggs and 3/4 c heavy cream, and approx 2 c veggies (broccoli, cauliflower, red pepper, white onion, and 1/2 a jalapeño!) I cooked this for 20 mins, then topped with Monterey Jack cheese (as that’s what I had on hand) along with two pieces of bacon that I chopped up. I added a little salt and pepper to the eggs prior to baking. It was delicious! Thanks for such a wonderful combination!
