In a stand mixer fitted with the paddle attachment or a large bowl with a hand mixer, beat the butter and sugar until light and creamy.
1 cup butter, 1 1/4 cups granulated sugar
Add the egg and vanilla extract and mix until just combined, scraping down the sides of the bowl as needed.

Gradually add the dry ingredients and mix on low speed until the dough comes together and no dry flour remains.
Scoop the dough using a cookie scoop. Roll in sprinkles or sugar if desired. Place on the prepared baking sheet and gently flatten each cookie slightly.

Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are set.
Let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
