So today I made RecipeGirl’s pumpkin bread..
Well not really bread. I made cupcakes!
I love pumpkin bread so much, but honestly I have no control so I figured if I made mini cupcakes I would have some self-control. (Didn’t work out so well)
This recipe is awesome. Not only is the flavor amazing, but the texture is perfect.
I decided to make cream cheese frosting, good idea right? 🙂
Cream Cheese Icing:
2 – 8oz Cream Cheese, softened
1/2 stick butter, softened (unsalted)
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/2 tablespoon meringue powder (optional – stiffener)
In a mixer blend together the cream cheese and butter.
Add in the powdered sugar, meringue powder, vanilla, and beat until well mixed.
Pipe onto cupcakes once cooled.
Dust tops of cupcakes once frosted with cinnamon.
