During my entire pregnancy I craved pizza. To be specific it was just regular plain cheese pizza. I wanted it all the time. The odd part was normally I’m not a huge fan of regular pizza. I actually really like vegetable pizza. Since having my daughter I still crave food maybe it’s because I’m nursing? Yeah, let’s blame it on that!
When pregnant hubby and I would split a medium plain pie and it would happen at least 2 times a month. Not something I’m proud of divulging, but now I’m proud that I’m making a better option for us. Growing up with an Italian family there has always been bread served with our dinner. Now I like to make a huge batch of bread and pizza dough once or twice a month and then we can just enjoy for a few days here and there. I know what I’ve put into the dough and I know that I’m not using harmful ingredients. One other thing I have changed is swapping out canned foods. The only time I’ll use something from a can is tuna.
When I make my pizza I like to use fresh tomatoes, but I found this brand that I absolutely love. It’s called Pomi and it’s BPA free. It’s a little more expensive than the cans, but when it comes to my family’s health the extra change isn’t worth saving. Since I crave my carbs I figured I’d make a pizza pie that is delicious while being a little on the lighter side. I enjoy my mozzarella more in salads or fresh rather than on a pizza that is perfectly without it. Please tell me you have tried a pizza without the cheese? Oh my gosh, you must! So without dragging on and on about how much you need to try this I’m going to just post the recipe and wait to hear what you think!
Marinara Pie for Two
Pizza Dough – just a small round enough for two
1 Container of Pomi Chopped Tomatoes
1 Tablespoon Olive Oil
1/2 Bulb of Garlic Chopped
1/4 Teaspoon Dried Basil
1/4 Teaspoon Sugar
Sprinkle of Salt
In a small saucepan combine all except for the pizza dough of course!
Heat on medium-low heat until boiling. Once boiling continue to cook on low for an hour so that the flavors can develop. Before fully done preheat your oven to 425. Roll out your dough and precook for about 5 minutes. Once the sauce is done put a generous amount onto your pizza dough. Bake for an additional 15-20 minutes more or less depending on the size of your pizza.
