    Cucumber Onion Salad with Salisbury Steak

    Do you ever just want to come home from work or a long day out and just kick your feet up and relax and spend time with your family? I do! The last thing I want to do after a day of momming is sit in the kitchen, cook dinner then clean up a huge mess.

    Salisbury Steak with Cream Cheese Mashed Potatoes

    I love making easy side dishes and then, of course, tasty entrées. Thanks to On-Cor I can have a family-friendly entrée in less than an hour! Plus, there’s NO MSG! 🙂

    Growing up my favorite On-Cor entrée was the Gravy & 6 Salisbury Steaks, hands down. I love the flavors and of course the gravy. We always had to serve it with mashed potatoes! Now that I’m grown up I like to serve it the same way, but also with a refreshing and lightened up side dish. Not to mention easy.. easy peasy side dish that is!

     Simple Cucumber Onion Salad paired with On-Cor Salisbury Steak and Cream Cheese Mashed Potatoes.

    My daughter loves cucumbers and thankfully my husband too. I grew up eating cucumbers like it was an apple so we always have tons of them in the house.

    I just put the On-Cor entrée into the oven and then start making the side dish and mashed potatoes. I like to let the cucumber onion salad sit a bit before serving so while the main course cooks in the oven we let it marinate in the fridge.

     Simple Cucumber Onion Salad

    For the mashed potatoes I make cream cheese mashed potatoes. They’re rich and creamy and I don’t even have to add any seasoning, they’re super delicious with milk, butter and cream cheese.

    While the water boils and the Salisbury Steak cooks we like to do a little craft together. Family time is so important and we even have a rule that we do not use phones in our house when we’re together and especially not during meal times. We set a timer so we know when dinner will be ready. 🙂

    Ingredients

    • 2 cucumbers sliced
    • 1/2 red onion sliced
    • 1 lemon or lime juiced
    • 1 tablespoon white vinegar
    • 1/4 teaspoon parsley
    • salt + pepper to taste
    Prevent your screen from going dark

    Instructions

    • In a large bowl combine the ingredients.
      Allow the salad to sit for at least 30 minutes in the fridge so the flavors can soak up into the cucumbers.
      Serve cold.

      We like the barbecued pork riblets, especially this time of year when McDonalds comes out with their McRib and we can make them at home for a fraction of the price.

      My kids too love cucumber a lot but haven’t tried much cucumber recipes. This was delicious!
