Growing up I loved when my mom would make fresh waffles or pancakes.  We loved when she’d add toppings like strawberries, blueberries or even chocolate chips!  One thing we didn’t like is when she’d give us freezer burnt waffles.. while we still ate them, they weren’t as good!  Have you heard that Aunt Jemima Frozen Waffles are now sporting new packages?  The new packages are sealed for freshness!  Kay still can’t have soy, so unfortunately she cannot eat the waffles.  We hope she passes soy soon or Aunt Jemima takes it out.  For now she has fun making breakfast for daddy!

Chris is up and out of the house within 20 minutes so a quick and easy breakfast is a MUST.  Kay loves helping make breakfast and even does most of the “cooking” herself.  She puts as many fresh ingredients as she wants and then tells dada breakfast is ready!  I love showing her how to take care of others as well as how to have fun in the kitchen.   Since the Waffles are a Frozen Breakfast it makes Breakfast on the Go so much easier.  Daddy loves his Waffles we make with the fresh blueberry compote.  Kay enjoys the compote on it’s own too!

We love making fresh blueberry compote for our breakfast but we also use it in smoothies and LOVE it on yogurt!  Hubby really devours the waffles as soon as hand it over.  We make everything with love and daddy can tell!  Kay is quite the little chef already and enjoys being in the kitchen!  I can’t wait until she gets a little older and starts experimenting with ingredients on her own.  I think she’ll have her own blog and youtube channel in no time!  She is so careful putting the compote onto the waffles.  I was surprised she waited to enjoy some on her own until after she topped all of daddy’s waffles.  She noshed on some of the frozen blueberries.  Blueberries are so good for you and berries were actually Kay’s first safe foods!  She survived about 3 months only eating berries and breastmilk.  Now she’s still breastfeeding but can have a slew more foods thankfully!

Also I’d love to add.. How amazing did Kay plate the waffles with blueberry compote?  She will definitely be doing more plating for the blog!!  I just love her artsy approach 🙂  Food blogging is so much more fun now that WE can actually cook together!  I was in such a funk when baby girl couldn’t eat ANYTHING but breastfeeding.  It was so scary.  I think she’ll be enjoying Aunt Jemima soon!  We’re really hoping that she is all through with FPIES and once she is – LOOK OUT FOOD WORLD!  We’re going to devour you together!

Ingredients
 

  • 1 cup frozen blueberries
  • 2 teaspoons cane sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • pinch of cinnamon
  • 1/2 teaspoon cornstarch

Instructions
 

  • In a small sauce pan combine all but the cornstarch on medium heat.
  • Once the blueberries are soft and syrupy add in the cornstarch.
  • Remove from heat and use as a topping.
