A few weeks ago I had surgery, and I’m finally getting back into the kitchen. I could barely walk without pain, and now I can finally move around enough to do much more than I could last month.
I relied on my husband a lot, and in the process, we would go onto my site and browse all the recipes to find what he’d make for dinner. He was doing most if not all of the cooking, but now he’s back to work now, and I’m back in charge of the kitchen. I missed it in there!
Right now my life is all about the sheet pans and one pot meals! Less prep and less cleanup. My go to breakfast right now is my Healthy Breakfast Bake! It has fresh kale, beets, kohlrabi (I LOVE KOHLRABI!), red cabbage, and eggs. I just toss it all into my favorite casserole dish or even onto a sheet pan. If you haven’t heard of Kohlrabi, please do try it. It’s one of my absolute favorite vegetables.

Healthy Breakfast Bake
- 1 package Kale Beet Blend
- 1-2 teaspoons olive oil
- 1/2 teaspoon salt
- 3 large eggs
- salt + pepper to taste for eggs
- Preheat oven to 375 degrees.
- Mix the kale beet blend with olive and salt and place onto a sheet pan or into an oven safe casserole dish
- Cook the kale beet blend for 5 minutes.
- Remove pan from the oven and make a well for the eggs.
- Crack the eggs into the wells and sprinkle with salt and pepper to taste.
- Bake for another 10 minutes, until eggs reach desired doneness. (my family likes the yolks cooked)
