If you have a sweet tooth these are great to make and save the rest too – you can easily pop the freshly baked cookies into the freezer after cooling. It’s nice to take one out whenever you want a sweet snack without overindulging.
Key Lime Cookie Ingredients:
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick unsalted butter
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1 tsp key lime zest
- 3 tbsp lime juice
- 3/4 cup white chocolate chips
Lime Glaze
You’ll need 3/4 cup powdered sugar and 3 tablespoons lime juice to make this lime glaze. Mix those two ingredients together to create a powdered sugar glaze that pairs so well with these cookies.
How to make Key Lime Cookies
- First, you’ll need to preheat your oven to Preheat oven to 375 degrees.
- Then Prepare a baking sheet with a light coating of baking spray or use a silpat.
- In a small bowl combine the dry ingredients, add the flour, baking soda, and salt and mix together until combined.
- In another bowl, add the butter and sugar and mix until it’s smooth and creamy.
- Then add in the egg, vanilla, lime juice, and zest and mix until combined.
- Slowly add in the dry ingredients into the wet ingredients and mix until well combined.
- Fold in the white chocolate chips and mix until just combined.
- Create cookie dough balls in a tablespoon amount, roll them in your hand and flatten a little. The cookies will rise a small amount but they do not spread.
- Place them onto your cookie sheet about 2 inches apart.
- Bake the cookies for 8-9 minutes. Do not overbake!
- Allow the cookies to cool a few minutes and then transfer to a cooling rack to finish cooling.
- Once cooled, mix together the powdered sugar and lime juice to form a glaze.
- Drizzle the lime glaze in a teaspoon amount onto each cookie, finish by adding a sprinkle of lime zest.
- Allow the icing to cool and set and then enjoy!
tips for the BEST Key Lime Cookies
- This recipe makes 16 cookies using a regular cookie scoop. Make 24 mini cookies by using a smaller cookie scoop.
- You can freeze the leftover cookies and take them one out whenever you want a sweet treat.
