    If you’re looking for an easy meal that cooks up quickly during the crazy school week this pork fried rice is a must. It cooks in less than 30 minutes and it’s an excellent way to use up leftover rice. Our family loves to go to hibachi restaurants so we make our fried rice like hibachi fried rice. It’s so flavorful and delicious and there’s nothing like making it at home. You can control the ingredients and best of all you can make tons of it for much less!

    Smithfield Marinated Fresh pork is pre-seasoned and ready to go, so this makes it even more flavorful, and it’s packed with protein. You can find a variety of cuts and flavors readily available at your local supermarkets, including Walmart, ShopRite, Publix, and Albertsons/Safeway. Find even more recipes on Smithfield.

    HOW TO MAKE PORK FRIED RICE

    1. Slice the pork loin filet into bite-size pieces.
    2. Place the pork into an oiled skillet and saute until fully cooked through to an internal temperature of 145F, about 5-7 minutes depending on how small or big the chunks are.
    3. Set the pork aside and then get started on the rice.
    4. Clean the skillet and then heat up some more oil, then add in the onions, carrots, and scallions.
    5. Cook the vegetables until they’re tender and onions are slightly translucent.
    6. Add in a scrambled egg and cook together.
    7. Once the egg is cooked, add in the rice, soy sauce, and cooked pork, then stir to combine.
    8. Finish with sesame seeds and garnish with green onions.

    What’s great about this recipe is that you can add in all the veggies you want. Add peas, bok choy, corn, water chestnuts and you could even double or triple the egg. It makes for great leftovers as well and you could enjoy it the next day for lunch. Fried rice is always a hit here!

    Ingredients

    • 1 teaspoon oil separated

    • 3/4 cup carrots chopped
    • 1 cup onion chopped
    • 3 cups white rice cooked
    • 1/2 cup green onion sliced
    • 1 large egg scrambled
    • 2-4 tablespoons soy sauce
    • 1 teaspoon sesame seeds
