Looking for the perfect side dish to bring to the next BBQ gathering?  You’re going to love our Red Potato Salad with Bacon!  It’s a family favorite at all of our parties!

Whenever you’re bringing a dish to a party you need to make sure you keep the food either hot or cold.  With our Red Potato Salad with Bacon you really need to make sure the potato salad is cold.  We do this by placing it into a cooler with ice packs.  I like to bring it in a large casserole dish that we can gift to the party host, if not we’ll use a tin foil pan and bring another type of gift for the party host.   I love to buy a few things and of course make things homemade.  If it’s a BBQ I ALWAYS make a jar of Sweet Balsamic Onion Relish!  This stuff is soooo good on burgers and grilled chicken!

I went to visit my sister and noticed our childhood Walmart has recently turned into a Walmart Super Center!  The produce section is beautiful and so new.

We really loved that they carry organic produce as well.  It’s always great to save a little and we were able to save quit a bit on our Red Potato Salad with Bacon by shopping for the ingredients at Walmart.

I truly love to bring our own family favorites to parties, this way in case my daughter, husband or even myself don’t like the options, we have what we brought, does that sound bad?  It’s actually happened before and I am usually not picky, but sometimes when we go to a BBQ it’s allllll protein and we like some veggies too!  Chris will always cut up a whole bunch of fruit and make a large fruit salad too.  I also like to make a batch of guacamole and chips – that is super simple to make and easy to bring along!

Now back to my potato salad!  I love to add fresh celery!  Growing up my grandma would put in celery seed, but I really like the crunch from fresh celery!  You can add whatever veggies you like, even add fresh corn or beets if you want!

This easy red potato salad with bacon is great for potlucks and parties!

Ingredients

  • 10 Red Potatoes , Chopped
  • 4 Stalks Celery , Chopped
  • 6 Hard Boiled Eggs , Chopped
  • 3 Tablespoons Mayo
  • 1-2 Tablespoons Vinegar
  • 4 strips Bacon chopped

Instructions

  • Place the potatoes a pot with water, bring to a boil and cook until tender.
  • Once the potatoes are cooked remove from the water and rinse with cold water.
  • Place the potatoes, celery and eggs into a large bowl.
  • Add in the mayo, vinegar and toss until combined.
  • Top with crumbled bacon and refridgerate until bringing to the party. *You can also top with bacon once you get to the party so it doesn't get soggy.

    I am not a big fan of potato salad in general. I think it stems from a bout of food poisoning as a kid. BUT….this looks delicious and light. And well….BACON! This will be something I try this summer.
