Heat the olive oil in a skillet on medium-high heat.

Season the pork chops with a little salt and pepper.

Sear the pork chops on both sides until browned (not fully cooked) and remove from the pan.
Pour the soups, sliced mushrooms, sliced onion, and seasonings into the crock pot and mix around.
10.5 oz cream of chicken soup, 1 cup chicken broth, 2 cups mushrooms, 1 medium onion, 1/2 teaspoon thyme, 1/2 teaspoon parsley, 1/2 teaspoon granulated garlic, 1/2 teaspoon granulated onion, 1/4 teaspoon celery seed
Add in the pork chops, pushing them down into the mixture a bit, and then put the lid on the crockpot.
Set your crockpot slow cooker for 3-4 hours on high, or 6-8 hours on low.
If you want to thicken the sauce, mix 2 teaspoons of cornstarch along with 2 teaspoons of water 30 minutes before the cooking time is complete, stir in, and then cook for the remaining time.
