Ingredients for Slow Cooker Bone-in Pork Chops with Mushrooms and Onions
- Bone-in Pork Chops: Bone-in pork chops have more flavor when cooked in a slow cooker because the bone also adds flavor to the cooking liquid as well.
- Olive Oil: We use this to sear the pork chops, giving them a nice brown exterior.
- Salt and Pepper: Season to taste; enhances the pork and balances flavors.
- Cream of Chicken Soup: We prefer using our homemade cream of chicken soup, but you could also use canned.
- Chicken Broth: We use our homemade chicken broth or bone broth, but you could also use store bought.
- Mushrooms: We used sliced mushrooms, white or baby bella works well.
- Onion: We love the texture that sliced onions add, but you could also chop them if you prefer them smaller.
- Seasonings: We add parsley for color, celery seed, granulated garlic, and granulated onion for flavor, and a bit of thyme for some earthiness.
- Cornstarch: Helps to thicken the sauce if a more gravy-like consistency is desired.
- Water: Make sure the water isn’t too hot, it can cause the cornstarch to clump up.
How to Make Slow Cooker Pork Chops
Heat the olive oil in a skillet over medium-high heat.
Season the pork chops with salt and pepper.
Sear the pork chops on both sides until browned but not fully cooked. Remove them from the skillet.
In the slow cooker, stir together the cream of chicken soup, chicken broth, mushrooms, onion, thyme, parsley, and granulated garlic.
Place the pork chops into the slow cooker, gently pressing them into the mixture.
Cover the slow cooker with the lid and cook on low for 6-8 hours or high for 3-4 hours until the pork is tender.
If you prefer a thicker sauce, Mix cornstarch with water to form a slurry. Stir it into the sauce 30 minutes before cooking ends and allow the dish to finish cooking.
We love serving over Jasmine rice, mashed potatoes, or egg noodles.
Recipe Tips and Notes
- Alternative Cuts: Bone-in chops offer additional flavor, though boneless pork chops are easier to serve. Be cautious when serving bone-in pork chops and ensure no tiny bones became loose, if so, discard before serving.
- Storing Leftovers: Refrigerate in an airtight container for up to 3 days. Reheat on the stovetop or in the microwave.
