Meatloaf, cupcakes?

Meatloaf cupcakes
{corn w/lemon pepper, ketchup web, parsley potato, fresh cracked pepper}

I don't care what anyone says about meatloaf!
I love it, and it's one of my favorite comfort foods. :)
Wouldn't it be fun to have dinner, but in a way have it like a dessert?
Meatloaf cupcakes are the best of both worlds.
You'll feel like a kid, and get all excited to eat one of these cupcakes!

Trust me, total crowd pleaser. :)
Your kids will now be begging you to make meatloaf!

Ingredients, meatloaf cupcakes

Meatloaf "Cupcakes"
Makes 6

1lb lean ground beef
1 egg white
1/2 small onion, chopped, sautéed with a little olive oil.
1/2 cup seltzer water
1/3 cup Italian bread crumbs
1/8 cup ketchup
1 tsp dried parsley
1 tsp garlic salt
1/8 tsp pepper

Pre-heat oven 350.
Mix all ingredients by hand, do not over mix.
Roll meatloaf into giant meatballs, and try to form into the cupcake liners,
also keep in mind that the meatloaves will shrink a little while baking;
so if it looks too big no worries!
NOTE: Line cupcake pan with foil lined cupcake liners.
Bake for 30-45 minutes.

Mashed Potato "Buttercream"

2 yukon potatoes
1/2 cup milk
1 tsp salt
1 tbs butter

Peel and chop the potatoes and bring to a boil.
Once the potatoes are done add them to your stand mixer bowl
along with the butter, and salt.
Mix at medium speed until potatoes are broken up,
then slowly add the milk.
Add more milk if needed for desired consistency.
Once potatoes are semi-cooled add them to a piping bag with tip of your choice,
and top the meatloaf cupcakes.

  1. Wow that is so cool. I love mixing my corn, m.potatoes and meatloaf together so I'd sprinkle mine with corn, kinda like confetti! Love this perfect for a birthday if you're cooking!

  5. Haha! I love it! Thanks for the recipe. I saw something like this once that was a whole meat cake - they frosted the whole thing with mashed potatoes, and it looked eerily like a real cake. LOL!!!

  17. Well, I just finished making these, and they are spot on.
    With the meatloaf, I added some bacon, and a little more onions~~
    And for the mashed potatoes, I added onions in them as well..but I also added some cream cheese..You'd be surprised what that can do ;D!
