Happy Early Valentine's Day!!

I love the fact that it's All Natural, as in there's no added sugars, preservatives, or artificial colors. I can think of so many uses for the concentrate, but first things first.. CUPCAKES! Did you know they're having a cupcake contest? Since February is American Heart Month, they're donating a dollar for each cupcake entry!

On to the cupcake, which I think is perfect for Valentine's Day :)
Chocolate Pom Cupcake
24 Cupcakes
1/3 Cup Packed Light Brown Sugar
1 1/4 Cup White Sugar
1 3/4 Cup All Purpose Flour
1/2 Cup Unsweetened Cocoa Powder
1 1/2 Teaspoon Baking Powder
1 1/2 Teaspoon Baking Soda
1 Teaspoon Salt
2 Eggs
3/4 Cup Milk + 1 Tablespoon Vinegar (Add vinegar to milk)
1/2 Cup Water
1/2 Cup Vegetable Oil
2 Tablespoons POM Wonderful Concentrate
1/2 Teaspoon Coffee Extract
1 Teaspoon REAL Vanilla
Preheat oven to 350.
Combine all ingredients into a stand mixer and blend for 2-3 minutes.
The batter will have a runny consistency. Fill cupcakes about 2/3 full.
Bake for 12-15 minutes, or until toothpick inserted shows minimal crumbs.
Cool on wire wrack.
White Chocolate Pomegranate Buttercream
6 oz White Chocolate, melted
1 Stick Salted Butter
1 Stick Unsalted Butter
6 Cups Powdered Sugar
1/4-1/3 Cup Heavy Cream
1/4 Cup POM Wonderful Concentrate
1 Teaspoon Tahitian Vanilla
In a stand mixer mix the butter until smooth, add in the chocolate.
Once combined, add in the powdered sugar slowly. Then add in the heavy cream.
It should look like hard ice cream. Add in the remaing liquids slowly, while mixing.
Once done mixing top cupcakes.




For the record.. Diet doesn't count when cupcakes are involved. Promise!
