Banana Chocolate Chip Oatmeal Pancakes

Just recently my husband and I have been on a banana kick.  Chocolate covered bananas, bananas, in cereal, bananas in smoothies, banana yogurt, and even banana frozen yogurt!  Then my husband told me he had never had a pancake with banana slices inside.. Say what?!  You haven't lived until you have tried banana pancakes.  Lately we've been trying to reduce the amount of milk we drink and limiting it to only cereal so it was only natural that I'd make my pancakes with Silk milk.  I love that Silk makes a Vanilla flavored option as it's perfect for baking and I usually use a lot of milk in many of my recipes.

Just recently they have improved their flavor!  They say it's better tasting, and it really is delicious!    They have the regular Silk Soy Milk and the Silk Almond Milk.  For some reason my Walmart was just about completely out of most flavors so we just picked up the Vanilla Silk that is new and improved. We used to drink so much milk and lately I've been reading stuff that really makes me #rethinkwhatyoudrink, especially with baby girl starting to eat soon and me nursing.  This is a great Milk Alternative for our family and perfect in many many recipes!  Be sure to check out Silk Soy Milk on Twitter and Facebook for recent news and updates - Also check out my google+ shop for our full shop and more pictures! Recently everyone has been going crazy about GMOs and I'm glad to say that Silk used soy beans that are non GMO, and sourced from North America.  It's also a great option for those who are lactose intolerant since it's 100% lactose and dairy free while still providing just as much calcium as milk with bonus omega-3s and protective antioxidants!  I appreciate that is has no cholesterol as mine tends to run high even with proper diet and exercise it's just something that runs in my family so I try to avoid anything that contains too much.  

Silk originally started out with their original Soy Milk in plain, honey-sweetened and carob-maple flavors in 1978, but has since come out with Fruit flavors, Coconut Milk, Creamers, and even Iced Latte drinks!  I'm proud to say that I'm a huge fan of their coconut milk and love it for my smoothies!


Now onto breakfast, where were we?!  Oh yes, Banana Pancakes.. how about some dark chocolate chips?  Yup, add them in there too!


Banana Chocolate Chip Oatmeal Pancakes

makes approx 1 dozen

1 Cup Oats

1 1/2 Cup Flour
1 Tablespoon Sugar 
3 Teaspoons Baking Powder
Pinch of Salt
2 Eggs
1 1/2 Cup of Vanilla Soy Milk
1/2 Cup Soy Milk + 1 1/2 Tablespoon Vinegar
1 Large Banana Sliced Thin
Chocolate Chips

In a blender grind the oats until it resembles flour.  Mix all the dry ingredients and add in eggs and 1 1/2 cup of soy milk, combine.

In a cup combine the 3/4 cup soy milk with vinegar and let sit for 2 minutes or until it looks like this

Add the mixture into the batter and stir!  Get your pan nice and hot and add a tab of butter to prevent the pancakes from sticking.  Place batter in pan and add slices of banana and chocolate chips on top.

Once you think your pancake is done - flip it over and let it cook on the opposite side.

Once done sprinkle with oats, chocolate chips, bananas, and some good maple syrup!  Enjoy!

  3. Silk has been in so many recipes lately. It's crazy to think that I only thought Silk was for drinking. I've also never seen that you can grind up oats instead of using flour.

    1. I actually buy oatmeal just to make oat flour! I love using it this way because the oats are too chewy for me as I was never a fan of oatmeal. LOVE using Silk! We use their Coconut milk all the time and now I'm loving this Vanilla in smoothies! :D
